camping menus

This is fun! I'm getting my menu ready for next weekend's fun at the beach, and here's my menu.

Friday
Breakfast - Sausage balls, juice and fruit on the road as we drive to the beach
Lunch - Sandwiches, chips or potato salad, cheeseball and crackers, veggie tray
Dinner - Peg Leg Pete's in Pensacola, FL

Saturday
Breakfast - Eggs, Bacon, Link Sausage, pancakes w/syrup, juice
Lunch - (Grilling in preparation for a couple of days) Hamburgers/Cheeseburgers w/buns, hotdogs w/buns, smoked sausage w/onions and peppers, kraut, onions, tomatoes, mustard, ketchup, dill relish, potato salad, and baked beans
Dinner - Steak, grilled shrimp, baked potato, broccoli cheese casserole, garlic bread, salad

Sunday
Breakfast - Eggs, sausage, toast w/jelly
Lunch - Leftovers from Saturday's grilling
Dinner - More leftovers or sandwiches

Monday
Breakfast - Eggs, leftover bacon and link sausages, toast w/jelly
Lunch - Sandwiches on the road driving home
Dinner - Home

I write all my menus for a trip down on a Word document along with my shopping list to make those items. After a couple of trips, I just start consulting my saved copies of previous menus. If I was real lazy, I could just print the menu from a trip but I usually steal a few things from each trip menu to make a new one.

I do my menu in excel - listing at the bottom any items that I need for that meal....very similar to this one!

We use Excel as well. Lists sure come in handy.....

As seasonal campers, we have the luxury of a grocery store 5 minutes away, so I shop on the fly to avoid overpacking our fridge and cabinets. I also discovered that we don't necessarily need three square meals each and every weekend. We keep breakfast staples and at least one easy emergency meal on hand. I like to try out a new gadget like the pressure cooker or smoker or a gourmet meal when time permits, and I pre-pack accordingly.

I do my menus in a Word table and put the shopping list below the table. I have now to printing out the non-familiar recipes and attaching to the back and it all goes in the trailer...

Recipes are not based on oven temp and time, but cooking distance in 'miles'!

Since campn4walleye camps a lot like we do, it requires a lot of time on the boat. We warm our breakfasts on the boat every day. On long days on the water we cook lunch on the boat too. And like was said before, same food as at home but easier delivery methods.

A weekend camper is going to bring and cook differently than the full timer or snowbird. The common 'weekend' camping o only cooking on the BBQ of hot dogs, hamburgers, steak gets real old real quick after a few 'years' on the road! :B

After the first year the BBQ went into the back bowels of the bays and I bought these to cook 'real' home style meals. Not to mention they both fold as flat as a laptop for easy storage in the bay. I don't like cooking anything inside the MH.



That's homemade chicken soup in that big pot. I had everyone stopping over to see what was cooking it smelled so good. I ended up having a CG party that night invited my camping neighbors and served up all the chicken soup I had made. No freezing any portions for me that day! :C

We did that with a big batch of chili with lamb and pinto beans. All gone just like you soup. I enjoy doing that too. Breaking bread is very important to me, my pop is a southern Baptist minister. Yeah, breaking bread was important in my childhood

We have a vacuum bag machine. When we make a lot of recipes, we make more, and vacuum bag it. We have to be a bit conservative due to freezer space. But, don't forget that the first few of the packets can be put in the fridge. Those would be the first meals to have.

Now, another positive to this is, all it takes to reheat is a pot and water with a heat source.

Biscuits and gravy (separate obviously)
Green chili pork/chicken/beef or your favorite
Country ham
Grilled chicken
Deep.fried turkey
Beer can chicken
Scotch eggs (some call it Scots eggs, whatever you call it, I call it good)
Your imagination should be in gear with all of the comments you have now....

Forgot to mention, we also keep a crockpot in the RV. We have used it numerous times.
