Add to this some summer sausage or hard salami. Use crackers if you are low on bread. Throw in some grapes and you have a good easy to transport picnic lunch. On our camping trips I like to have a container of chicken salad. This can be eaten on it's own or with bread or crackers. For dinner we are usually back at the RV. If I know we will be gone for a long time and will be tired (made a day hiking) I usually make that a crockpot night. I just throw everything in the crockpot after breakfast and we have a nice hot meal when we return in the evenings.
