It's when it's cold out (and even parts of florida can get cold enough in winter), you run into a problem. Obviously, you don't want to run the air/con when it's 35F at night and you also, likely don't want to open the windows.
Fans will help reduce condensation.

The cause of the condensation is the walls are below the dew point temperature. If the walls can be made warm enough the problem disappears. Running a fan to circulate air may help to raise the temperature on the surface of the wall.
One other solution is to reduce the relative humidity inside the RV.
The easiest way to do that is to open a roof vent a bit, find the furthest window from the vent and open that a bit. An electric heater near the window will improve that and keep you warmer. I'd suggest a low wattage radiant type, or a small oil filled (if the oil filled can be on a shelf so the air from the window passes over the fins.)
I know opening a vent and window when it is cold seems counter intuitive, but it does work.
Another possible solution is an electric dehumidifier--but the cooler it is the poorer they work. They are generally energy hogs, some what bulky and definitely noisy. - Grit_dogNavigatorNever had humidity issues in most any weather/climate except below freezing weather and 4 people in the camper.

Always leave one vent cracked open to allow air flow in the camper night and day. Unless your in a very humid area, I can’t see why you would need a dehumidifier.
You may want to put a hyper vent mattress pad under the bed mattress so there is air flow under there. Some people complain of moisture / mold under the mattress. My Northern Lite came with that pad as standered equipment.

To keep cool at night you don’t need the AC blasting away. The trick is, close all windows and vents. Then slightly open the window beside where you are sleeping. Then if your fantastic fan is like mine ( remote control) in my Northern Lite, start up the fantastic fan 100 % fan speed. Then slow the fan down to about 50%. The draft the the fan will create will pull a small breeze by you in your bed.
We ordered our Northen Lite with out a AC, as we never used it in our prevouse 5th wheels so why carry the extra weight. The NL camper comes wired up for the AC so if we ever want to install one we can.
Unless you cook a lot with a Microwave I would get one. In my camper, again we ordered ours with out the Microwave as it is a waste of space inside a cupboard. All we did in our 5th wheels was store bread in the Microwave, and free cupboard space is hard to come by in a camper.
Get the camper equipped with 6volt batteries, the last longer when dry camping.

I made a topic about it and you can see some posted remedies when you find it. From what was posted - easy dehumidifiers don't exist.
AC is efficient, but not in winter.
