After reading all of this it seems like the best way to do this is by small steps.
Start by camping without services for 1-2 nights when it's not too hot at night. Then we see how much water and battery we really use. We have 3 season sleeping bags so cold is not an issue even if the battery can't start the heater anymore. We have survived tent camping before with much less than the RV gives us.
We were planning to never stay in one place more than 3 nights anyway. This is going to be a road trip. So if we can make the gray tank and battery last that we are OK. Next night can always be at a campground or charge the battery from the truck on the road and find a dump station.
And then after a few times if we really enjoy it and feel limited by the lack of AC/Microwave/Toaster oven we can think about getting a generator(s). Maybe some Yamaha dealer will let us test the 2400w before we buy to see if it works with our AC.
Good plan, this is why you're the Dad.:B
Now-a-days, it's easy to get accurate weather information and forecast so if you anticipate really hot or hot and humid days ahead, you can bunker down at a campground to run the AC. FWIW, I've always done without AC and my super-insulated rig doesn't get any hotter than ambient but I'm migrating toward AC and a genset just because I'm old and getting fussy.
