Depending upon the length of our trip will determine how much food we bring along. Week-end camps are pretty simple. We plan for each breakfast, lunch, and dinner and then .... really .... very seldom stick to the plan! We remain flexible as the wind, since it's just my wife and me. We usually end up sleeping in LONG in the morning and having breakfast at noon, and lunch at 6:30 pm! Or may be out site-seeing and end up eating out, or stop in at a Dairy Queen and just ruin meal times all together.
When planning for longer trips (like a week to 10 days or more), we still plan only for about 3 days, and then plan on purchasing new every couple days after that.
Anything left over, like frozen meats, stay in the camper till the next camp out. We keep the camper stocked at home with drinks, as we use the camper at home all summer, and very seldom sleep in the house.
When traveling, we just pack the refrigerator like we do at in the house. Never had a problem with things spilling, falling, or the door coming open.
In the cabinets, we use plastic baskets to put smaller items, like McCormicks seasonings and cans of vegetables and such, so they won't fall on our heads when we open the cabinet doors that first time after traveling. No problem with anything shifting.
Basically, pack your stuff with the anticipation of it falling out of the cabinet, pack it so it won't. And you'll be just fine!
