Many epoxies don't bond well to many plastics. Since Corian is more or less a mixture of a plastic base with some filler added, it probably wouldn't bond too well with standard epoxy.
There are specialized solid surface countertop adhesives available...for a price.
If it were my tabletop, I might be tempted to try adding some mechanical fasteners such as screws through an additional bracket made from e.g. an aluminum angle extrusion on the underside.
