Typically, the "Water Heater Pilot" led should come on momentarily and then go out when you turn your water heater on. If the led stays on (or comes back on shortly), that means that the pilot light is out (or didn't light) and needs to be relit; cycle the switch and try again.

Battery switch is likely giving you the battery charge level on both the house battery (top) and the chassis battery (bottom). Or the bottom is for a separate generator battery (unlikely)?

For what it's worth: We always leave home in our Class C with every tank full that should be full and every tank empty that should be empty. When out and about on a trip we do the same whenever heading out to any boondock camping site on the Far Side of Beyond.

We don't have to "believe our tank lights" for the black water or fresh water tanks. For the black water tank we can look down the toilet with a flashlight to confirm how full it is, and for the fresh water tank we can lift the bed mattress and look down through an inspection hole to view the see-through freshwater tank.

For the grey water, propane, and chassis fuel tanks we have to believe their gauges!

We travel always when possible with full fresh water tank and empty holding tanks so that we never have to pass up a beautiful campsite or leave a beautiful campsite before we want to do so.

In a short time of use, you will discover those digital sensors will become less than accurate. As you use your rig you will establish a feel to know your water level, LP and holding tank level without having to look at a sensor.
There is more than one way to use an rv. Some are hooked up to W/E/S/Cable where you can endlessly use water and sewer while others boondock off grid without hookups.
It’s then that you’ll need to be more careful in water consumption in relation to the tank sizes of your particular rv model. You need to approx ‘calculate mentally’ in what you have dumped into your holding tanks as you deplete your freshwater supply tank.
At that point you’ll be ‘self contained’ and you will get a feel to know your levels without pushing any buttons.
I always run with full freshwater. You never know when you might have an emergency and need to pull over to spend the night. You’ll need water.
