Has your wife had surgery yet? Hope all turns out well. Was sorry to hear about her problem. My wife possibly will have major surgery also. Will find out in early December. Sometimes these things just sneak up and bite you. The gold in our "GOLDEN YEARS" seems to have a little tarnish lately.

Finally got through a small stall period and hit the promised land. The result is like a beautiful brisket but dripping with flavorful rendered fat.
I separated the meat from the braising veggies and screened off the juices for my gravy.
Every cook has certain jewels to the cook that that save for themselves. Mine is the carrots that have roasted in beef juices for hours. Yum! - magnusfideExplorer IISD why would you taunt this old feller with drool to the max goodness?!

Vic - SWMOExplorerOne problem with them is that most butchers trim them now. Decades ago they were meaty, but now it seems hard to find them that haven't sacrifice some lean to hamburger.
Virtually all the meats that used to be relegated to the cooler, you had to ask for them, or to the freezer have skyrocketed in price. It's ridicules.
$5.99 is probably about what they are here, the same as ribeyes on sale.
