Coconut Poke Cake


You can find this cake all over the internet. Its white cake soaked with sweetened condensed milk,cream of coconut covered in cool whip and shredded coconut. Duncan Hines Coconut Cake


Ingredients


1 (18.25 ounce) package white cake mix
1 (14 ounce) can cream of coconut (I use Coco Lopez)
1 (14 ounce) can sweetened condensed milk
1 (16 ounce) package frozen whipped topping, thawed
1 (8 ounce) package flaked coconut

Baking Instructions


1. Prepare and bake white cake mix according to package directions. Remove cake from oven. While still hot, using a utility fork, poke holes all over the top of the cake.
2. Mix cream of coconut and sweetened condensed milk together. Pour over the top of the still hot cake. Let cake cool completely then frost with the whipped topping and top with the flaked coconut. Keep cake refrigerated. It makes 1 9X13 cake

    The recipe looks fantastic! Going to make Apple Dumplings July 1st for my sister and her family. They are parking their RV in our backyard for a month. Wish us lucK, LOL!!!

  • One of my family's favorites:
    Let a gallon of any ice cream soften while you put away groceries
    Pour Magic Shell on a pre-made graham cracker pie crust or Oreo pie crust
    Stick pie crust in the freezer until magic Shell hardens (finish putting away your groceries)
    Spread ice cream on top of Magic Shell, then swirl some more Magic Shell in top.
    Freeze the whole thing with the cover that comes with the pie crust.
    I usually do all of this, cook dinner, then pull out the pie. Let it sit for a few minutes to make it easier to slice. It's yum.

    These directions are for a pineapple pie. I've substituted various fruits & pudding & they all turn out great. Try Frozen sweetened strawberries with Cheesecake pudding mix (yes Jello makes one), or blueberry pie filling with lemon pudding. You might need a tad more milk if the fruit you use isn't juicy enough.

    Pineapple Sour Cream Pie

    1 graham cracker crust
    1 small box instant vanilla pudding mix
    1 small can crushed pineapple, undrained
    1/4 c. Milk
    1c. Sour cream
    1 tub Cool Whip

    Mix pudding mix, milk, sour cream, & pineapple together. Pour and spread into crust. Top with whipped topping. Refrigerate at least 4 hours or overnight.

    I don't know about the pudding in the frosting. By it self it's pretty rich. It's the best coconut cake I ever eaten.

    2 cans (8 Oz. Cans) Crescent Rolls
    2 sticks Butter
    1-1/2 cup Sugar
    1 teaspoon Vanilla
    Cinnamon, To Taste
    1 can (12 Oz.) Mountain Dew Soda

    Preparation Instructions

    Peel and core apples. Cut each apple into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 buttered pan.

    Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over apples. Pour Mountain Dew around the edges of the pan. Sprinkle with cinnamon and bake at 350 degrees for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

    Note. We generally just use one cup of sugar. Any lemon lime soda will work.

  • I make the same white cake with whipped topping but use Jello instead.

    Make the cake in a rectangle pan

    Poke holes all over the top of the cake after it has cooled

    Use your favorite Jello flavor, small box, only use 1/2 the water to mix the Jello, not the full amount. Pour over the top of the cake.

    Top with Whipped Topping

    I use strawberry flavor and then sprinkle with those multi colored sugar sprinkles
