Forgot to mention that I use Krusteaz waffles mix.

Tip - Replace the water with regular sprite or 7-up. The sugar in the pop will crystalize and make the waffle crispier/firmer plus add sweetness. (In addition, I also use double strength madagascar vanilla extract.)

I agree with the Mexican vanilla choice. It makes a huge difference.

Whenever I use vanilla it has to be the Mexican vanilla. Hands down the best!

X ever how many on the vanilla. It also does wonders for oatmeal, particularly if you sub fat free milk for the water.

When I make pancakes or waffles I use liquid coffee creamers instead of milk. There are dozens of flavors. My favorite is Pumpkin Pie Spice.

The vanilla does it. I also add that to the egg mixture when making french toast.

The reason I wanted a mix is that we have a small concession trailer which we take to events throughout the year. We do fresh baked cookies, soft baked pretzels, pizza sticks, frozen bananas, nachos, popcorn, caramel and cheese corn, hot dogs, coneys, apple chips, etc. Wanted waffles for early events for a breakfast item. Have limited power and refrigeration. Don't want to worry about milk, eggs, etc. At home, I make most things from scratch. In the trailer we need quick, easy but good. If it doesn't taste GOOD, we won't serve it. If we won't eat it we won't serve it.

I don't have a problem with mixes for some things, but often a baking mix is nothing more than the dry ingredients with a preservative. If it requires only one liquid I don't mind, but when I have to add more than one I shy away from them. Mixing I just mix my own dry ingredients for a lot of things. They can be premixed for a trip or mixed and put in the freezer for the longer haul.

The advantage of doing it from scratch is that you don't need to keep a single purpose mix on hand for those times you want waffles.

I like everything from King Arthur, but I suspect their "from scratch" recipe will produce even better waffles than their mix. For one thing the yeast will be fresh.

You are right of course but if some of the ingredients are not normally found in your pantry a well made convenience mix can be useful. I'm renowned for my non baking skills and will use any ''non laden with additives I canna pronounce'' mix available. As a side benefit it helps in impressing my DGD that her "Noonie" is still Charlene in Charge;).
