Bubble and Squeak

Anybody got a good recipe for Bubble and Squeak?

  • This if from the Two Fat Ladies. Used to love that show. When we remodeled out S & B kitchen we named the Viking stove Jennifer and the G.E. Mongram fridge Clarissa .

    INGREDIENTS

    1 pound boiled, cold potatoes
    2 ounces dripping or lard
    1 onion, finely chopped
    8 ounces cooked cabbage or sprouts, chopped
    Salt
    Black pepper, freshly ground

    DIRECTIONS

    Finely chop the potatoes and crush slightly. In a frying pan melt half the fat and lightly fry the onion. Mix in the potato and greens and season well. Add more dripping or lard. Press the bubble into the hot fat and fry over a moderate heat until browned underneath. Turn the bubble over, add the last of the fat and fry until the other side is browned.

    Yield: 8 to 10 servings
  • Rob, I haven't had this in years. I will do some digging in my cook books. The version I made was just cabbage and sausage. I don't remember potatoes but they would be good. Thanks for starting the topic!
  • Sounds very interesting so far. I will have to accumulate some left overs for a few days as we usually have very few per meal.
  • This is the recipe I use from allrecipes.com. It gets a 4 3/4 star out of 5 rating and my DH and kids like it.

    Bubble 'n' Squeak

    "Cabbage, bacon, ham, onion and leftover potatoes make up this tasty, easy dish. This is a great way to get the kids to eat cabbage. Using leftovers makes this main dish especially quick to make. I recommend using a good nonstick pan. Serve with ketchup, if desired."

    INGREDIENTS:
    1/2 medium head cabbage, sliced (I used a whole head of cabbage)
    3 slices bacon, diced
    1 onion, thinly sliced
    1 cup cubed cooked ham
    1 tablespoon butter
    3 cups potatoes - baked, cooled and
    thinly sliced
    1/2 teaspoon paprika
    salt and pepper to taste

    DIRECTIONS:
    1. In a medium saucepan, cook cabbage in a small amount of water for about 5 minutes, or until tender. Drain, and set aside.
    2. In a well-seasoned cast iron skillet, cook bacon and onion until onion is soft and bacon is cooked. Add ham, and cook until heated through. Add butter, then mix in the cooked cabbage and potatoes. Season with paprika, salt, and pepper. Cook until browned on bottom, turn, and brown again.
  • There is no specific recipe it is simply a way of using up whatever vegetables you have left from dinner the night before.
    Mashed potatoes is the glue to hold it together.

    Large cast iron skillet
    Saute some chopped onion in butter until translucent (about 3 minutes)
    Form the left over vegetables and mashed potatoes into small patties
    Turn up the heat a bit...fry the patties for about 10-12 mins. until heated thru and slight crisp edges (turn a few times to evenly heat thru)

    Left over vegetables.......cabbage, carrots, peas, Brussels Sprouts, green beans finely chopped

    Makes for a great breakfast...fried egg on top.
    Drizzle with a little syrup, hot sauce or ketchup
