Cauliflower Salad

I have not made this yet, but it sounds so good I am definitely going to try it.

1 head of cauliflower steamed or boiled until tender in bite size pieces
6 boiled eggs (when done peel eggs, rinse and separate yokes into a bowl. Then mash the yolk and cut the whites into small bite size pieces then blend
together.
1/3 cup (appx) miracle whip or mayonnaise (dont use light it has more carbs)
3 tbs of mustard
3 tbs of pickle relish
1/8 cup of chopped onion (uncooked) can use more if you prefer
salt/pepper to taste
mix all together and you can garnish with egg slices and parsley
chill over night ( 1 cup of cauliflower is only 3 carbs vs 1 cup of potato is 37!!)
  • A million Thanks for posting this ! I made it last night and it's very good. I used diced celery since I had no relish. Any more low carb recipes or tips will be welcome ! I have an electric steamer and I steam a whole bag of baby carrots or fresh green beans then store them in quart glass jars in the refrig. Easy to spot and we eat them on leaf salads or warm them up and eat with meat. Pumps up our veg consumption. Our Doctor says eat 5 to 6 cups of vegs per day !! I actually store a lot of things in glass jars. I recycle plastic peanut butter jars but not the lids - they will fit narrow mouth jars.
  • Nice reading recipe, TexasShadow, and as already noted reads a lot like potato salad.

    Cauliflower is having it's moment in the sun and I enjoy all the innovative ways it's being treated.

    Mountain Mama, it's been a long time since I ate mashed taters but I have found that running cooked cauliflower thru a food mill (fine disc)or immersion blender gives a smoother texture that really does make it harder to tell the difference.

    Also wuvvv grilled cauliflower steaks when eating vegetarian (we try to do that at least twice a week) or just not in a meat eating mood.
  • I wouldn't cook the cauliflower. Just use it raw. Also, I tried it mashed like potatoes & I could tell the difference...Haven't done it again.
  • Sounds great. I also am a diabetic, do you have any other great recipes? Always on the look out for something like this.

  • Sounds delicious. Hubby is diabetic so will make this instead of potato salad, which I love but don't need the extra calories. Thanks for sharing.
