I've probably eaten enough bologna with good tomatoes and cheese sandwiches, in school lunches and so on, to feed an army.
In Southern Indiana farm country many Mom and Pop Diners have it in place of ham on the menu. Ask for ham and eggs and bologna is what I got.
Ate so much of it we never bought much of it after we got married, after seeing how it is currently made. When I was young it was bought in big rolls or logs. Hung in the smokehouse with other meats, at Grand Ma's. It looked withered and it was smoked and tasted different. I never was a big fan but occassionally a blonie samich with good maters and crisp lettuce and mustard hits the spot, maybe a big slice of yellow onion. Delicious. - mac91360ExplorerTake a chub (five pound stick)of bologna, remove the red rind used for wrapping, brush with BBQ sauce and throw on the smoker for about four hours at 275F. Cut in 1/4 inch slices. makes the best sandwhich ever. What you don't use you can freeze and warm up in microwave. I use hickory for smoking. People that don't like bologna will be lined up for a sandwhich. Taste so good I only add two slices of bread, nothing else needed.

Lots of ways to fix it. - Shortie3ExplorerHaving been raised by a health food nut of a mother, I did not taste balogna until I was in junior high: during school, we had a snack break at 10 a.m. and at the snack bar we could purchase a balogna sandwich with a small bag of chips for 25 cents. The balogna was between 2 slices of Wonder Bread that had been slathered with mayo and mustard - I would pour the chips between the slices, then smash them up and eat! First time I ever ate white bread, balogna, and chips and, believe me, I was in heaven! Haven't had one in years and now after reading this thread, believe I'll head on down the hill to the market for some white bread and balogna!
