1 stick butter
2 cups sugar
1/2 cup milk
1/3 cup cocoa powder
2 tsp vanilla
1/2 cup peanut butter
1 cup shredded coconut or chopped nuts
3 cups quick cooking oats
Melt butter in large saucepan. Add sugar, milk and cocoa. Bring to boil and cook one minute. Remove from heat and add vanilla and peanut butter, coconut or nuts. Add oats one cup at a time, coating thoroughly.
Immediately drop by Tbsp onto waxed paper or a silicon baking sheet. Let cool and dry.
Peanut butter can be crunchy or smooth, as preferred. You can also substitute Nutella for the cocoa, peanut butter and nuts, and Splenda for the sugar.

1 medium onion, chopped
Oil
32 oz. chicken stock
Jar of peanut butter, creamy or chunky
Sour cream
Sauté onion in a bit of oil (peanut would be nice) until soft. Add stock and heat to boiling. Remove from heat and stir in peanut butter, until it's a thick, creamy texture. Amount may vary according to your tastes.
Serve with a dollop of sour cream on top.

Of course the soup has dough b'ys in it. For those outside Newfoundland, dough b'ys are better known as dumplings. With that she also makes fish cakes with salt cod.
Makes for a hearty evening meal, to give let you stay up late putting together the little kiddie's toys.
