Foil Packets

On our last few camping trips we started doing foil packets. Here are a few that have worked for us:

Chicken & vegetables
  • Chicken breast cubed
  • Butter
  • Chicken bouillon
  • Water
  • Garlic powder
  • Onion powder
  • Italian Seasoning
  • Fresh Vegetables: Onion, green peppers, asparagus, mushrooms
  • Frozen vegetables of choice
Wrap all in foil, turning often. The added water is necessary to form thin sauce, and the butter for a richer flavor.


Tortilla Fruit Pies
  • Canned Fruit Pie filling
  • caramel
  • Sugar
  • cinnamon
We put some carmel on a tortilla, added on pie filling, splash of cinnamon and spoon full of sugar. Then wrapped like a burrito/eggroll. Wrap in foil. Turn often and cook all side for even toasting.


Banana Boats
  • Banana
  • Chocolate chips
  • caramel
  • mini marshmallows
Cut throw banana lengthwise and pull to form a boat and put in rest of ingredients. Wrap in foil and cook, we only cooked bottom side down.


Notes:
  • Easily customized per camper(kids)
  • Easy cleanup
  • Heavy duty foil is a must
  • Quick

  • Hobo Pies
    2 lbs hamburger
    1 can each (drained)of corn, Green Beans and 2 cans of diced potatoes.
    Or u can use 2 cans of mixed veggies like vegall instead
    1/2 stick of butter
    Salt and pepper to taste
    I like to add a little onion to half as I have a picky eater that wont eat onions. Mix all with your hands.
    grab a handfull and form in a ball like you are making hamburger pattys. Put in a sheet of heavy foil and smash the ball down slightly making a dent in the center with your thumb. (helps center cook) fold center and sides. The hubby and I form a assembly line with me forming the pattys and him wrapping with foil. If you are doing it yourself get your foil sheets out in a stack first. It gets messy if you are forming and wrapping by yourself.. If you are cooking it directly in the coals of the fire I would double wrap it..But I usually just cook them on our firegrate..Turn them a couple times .. Should take around 15-20 min depending on heat of your fire and thickness of your pattys..Take one out and cut in half to check the doneness.. If cooking in your oven 350 for 45 min.
    Add in options are endless... BBq Sauce, mushrooms, peppers, etc..

  • You will also find foil pouches work well at home too, both on the grill and even in your oven. I think the secret is butter, butter, and more butter myself!
  • Honestly, foil packs, will work for most any type of casserole dish you can think up. Just requires some substitutions in most cases.
    I'm not big on recipes per se...more techniques so when I think of something specific I'll come back.
  • We like smoked sausage sliced, with partially cooked red potato bite size chunks, green beans,carrot and onion and a little butter and a sprinkle of salt. I cook the potatoes, carrots until 3/4 done, add the green beans until brighter color green. Drain - add the bit of butter and sale and mix with the sausage and onion in the foil packet.
  • My father called them "Cowboy packets" so I do, too. I fold over about a 24" sheet of heavy duty foil to start off.

    Rub with a little olive oil to prevent sticking. I usually flatten a bit of ground beef, not quite as large as a hamburger, in the middle. Top with diced, peeled potatoes, chopped or sliced onions, carrots - about 1/2 " thick sliced on an angle. Ground pepper and Lary's seasoned salt. Sometimes a squirt of Swwt Baby Ray BBQ sauce.

    Then seal up the bundle but not too tight or flat - allow some room for the steam.
    Cooks in 15 or 20 minutes on the grill grate.

    I've put leftovers on the intake manifold before. Does that count?

    In Boy Scouts we called them Hobo Dinners.
    Prepare so that 2 hamburger patties are surrounded by carrots, potatoes and onions on the top, sides and bottom. I like to add a spoon full of cream of mushroom soup for a gravy texture too. With the veggies on the outside they will keep the hamburger from burning too quickly as you rotate it.

    As a bonus (remember learned this in Boy Scouts), if you make them ahead of time and then freeze them, they make for a great ice pack to keep other things like drinks cold on that first day of hiking with your backpack, then a great dinner at night.

    Haven't tried with chicken but I'm sure I will soon now. Keep the ideas coming.
  • Good job everyone! Another option is to set a large foil pack in a Dutch oven for slow roasting. The cleanup is warp speed too.

    Seafood Foil Packets
    Since I've rarely been able to follow a recipe to the letter I'd add kale to the NE Clambake version for a "one pot" dish that nods its' head to the influence of the Portuguese of New England. A little sweet smoked paprika prolly wouldn't hurt either.
