Soak a bag of dry black beans overnight in 6 cups of water(or boil for an hour)
In the morning add:
The ham bone
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
1 1/2 tsp salt
1/2 tsp cayenne
1 Bay leaf
Simmer this soup all day. Then remove the remaining meat from the ham bone, dice it up and return to the pot. Discard the bone.
Ladle into bowl. Garnish with diced monterey jack cheese, diced avocado and crumbled tortilla chips. - matt7591ExplorerLentil soup. Sweat some finally chopped carrots, onions and garlic with a couple tbs of oil, add some thyme, 2 quarts low sodium stock of choice, add the ham bone and lentils. Cook for about an hour on just above simmer, with a just barely open lid. Salt and pepper to taste. Good eatin.

Soak a pound of the SMALL red beans overnight in six cups of water...cook 'em on the stovetop 'til done, throw the hambone and whatever seasonings you like in the pot, and put it in the oven on about 250 for six hours or so. Lots of "gravy" is what you're lookin' for, so if things look a little dry add more water.
