looking for electric skillet breakfast casserole recipe

Here is the issue: We camp with another family so there is anywhere from 9-11 people (adults and teenagers). If I was at home I would make the night before a breakfast casserole and put in the oven in the morning. When we camp it is usually hot weather and I avoid using the oven. I have tried crockpot recipes, but haven't found one that cooks evenly. Has anyone used their electric skillet to make a breakfast casserole?

    Instead of the 2 eggs that the recipe calls for, we will break 2 eggs per person into a bowl and then use a whisk to mix. Use a ladle to ladle the eggs into the baggie with the other ingredients.
  • We do a German Farmers Breakfast that everyone loves.
    My dad had it growing up in the 30's in Ohio. Car camping he would fry some bacon or sausage then fry canned potatoes, an onion, a couple slices of bread and drop a dozen eggs in.

    We now use fresh bagged potatoes, an onion, a pack of precooked ham chunks, a couple slices buttered bread cubed then use half egg beaters and 6-8 eggs. If you get the really big skillet, you could double it.
    Sometimes I sprinkle cheese on top. Serve with Salsa on the side.
  • Hash browns fried crisp. Crack one egg per person on top of hash. Cover with lid, set to low, and let the steam cook the eggs. Or you can do the hash browns with chopped ham and onion in the skillet. Then scramble up a dozen eggs separately.

    For crowds K.I.S.S. recipes work best.

    Just a heads up....if your egg based breakfast casseroles aren't cooking evenly it's prolly time to get a new crockpot OR you are trying to put too many eggs to solids in the pot.

    What's your fav breakfast casserole dish? Sweet or savoury? If you have a favorite recipe just post it here and I'm sure it can be converted to electric skillet cooking.
