Can I infer from your comments that you are talking only about countertop, not built-in appliances? While you don't say what you have built-in, you do list some must haves, or think you must have.
I think a lot of it depends upon what you have built-in and what type of cooking / foods you do most. For example, if you're really into Chinese and Indian food, maybe a rice cooker is in order. If you're strictly Tex-Mex, maybe not so much. Also are you making food from scratch or doing convenience foods that you only need to heat in a microwave or sauce pan?
While we mostly do food from scratch, we do take along prepared ahead meals for some. For extended trips, this is less likely. But I guess I'm a minimalist.
I got an
electric skillet recently rather than a less than satisfactory skillet on a gas range. Low simmer range is good. Works as a pancake griddle when needed. I use one at home regularly, too.
I also got a
crock pot at Goodwill last winter, but have yet to use it.
Dutch oven is a staple for outdoor cooking. Pizza, chicken, roasts, stews, biscuits, etc.
That's it.The only other regularly used appliances, even at home, are
* Cuisinart grill/griddle combo (like a George Foreman, used when the outdoor BBQ not feasible)
* food processor for chopping and mixing,
* large stand mixer for baking doughs.
Everything else we either never got or got rid of.
