OP:
What kind of rig do you have?
Does it have a 30 or 50 amp shorepower?
Do you have a genset or are you going to get one.
Watts are very important to determine what you get. You will need to determine after you settle in as to what you can or cannot run.

I took a kill-a-watt meter with me when I was shopping. I managed to find a toaster that drew only 730 watts. The coffee maker draws 400 watts.

I do a lot of boondocking and urbandocking. My life is lots easier now that I have a hybrid inverter.

If you plan to be off the grid, then add as much solar as the roof will support with no shade on any panel.

Only you can answer your question as everybody's different in their needs/wants for appliances. Start out bringing what you think you might need and after a while you'll discover what you don't really use and start eliminating things.
We basically bring a large Bodum French Press, and that's about it. Everything else we chop/blend/mix by hand. We have a nice Waring Belgian Waffle maker that we bring from time to time if we we have shore power, but don't normally carry it in the trailer as it's rather large and heavy. You'll find you can "custom tailor" the things you need depending on the trip and what hookups you have.

I full time so space is at a premium. I purchased a unit that has plates for waffles, a foreman type grill, and sandwich. I use a toaster, small two cup coffee maker and an induction cooker (Nuwave). I have an appliance that doubles as a roaster and slow cooker which is small enough to fit in the sink, so I can use it while traveling. I do carry an electric whisk type of unit, but I rarely use it.

We fulltime so we don't have the option to prepare food ahead of time. Two most used appliances: 10 cup Coffee maker (900W) and crockpot (375W).

We also have a cuisinart blender/food processor combo (the food processor part is mini) (600W), a hand mixer, a single cup coffee maker (500W), and a coffee grinder (200W).

I do have a bit more space than you, so besides a toaster and coffee maker, take my bread machine and crockpot. We spend the summer in the motor home, so they are used frequent enough to warrant bringing them along.
