Parmesan Rotini Skillet

Tried this out tonight and boy it's a keeper that's going into the camping file. One dish and just a few ingredients. We made 1/2 the recipe and still had more than enough for the two of us.

(true to most online recipes, most of the reviews gave me a chuckle when they go like this, "This is delicious, I didn't have A and B so I left them out and just added C and D because we like them." Actually, I used penne instead of rotini.)

  • Looks good! I think I would precook the sausage and freeze it at home. It would cut the cooking time and be an easy one to whip up after a day out seeing the sights. Thanks for sharing!
  • I heard recently that one place that publishes recipes goes through an extensive test of altering the recipe in ways they predict the consumers will do. It needs to come out reasonably well before they publish it.

Welllllll I'd sub out the Kraft Parmesan cheese stuff dust fer sure and either use chopped fresh parsley or that new parsley paste you can find in the refrigerated section of the produce dept(wuvvvvv that stuff and no waste!). Yeah. I'm one of those use what's on hand and STILL review the recipe people;):D.

Crumble sausage into large deep skillet; cook 8 to 10 minutes or until evenly browned, stirring frequently. Drain sausage; return to skillet.
Stir in tomato sauce, undrained tomatoes, water, basil and oregano. Bring to a boil. Add pasta; stir. Cover; simmer on medium-low heat 18 to 20 minutes or until pasta is tender, stirring occasionally.
Mix ricotta, 1/4 cup Parmesan and parsley; spoon over pasta mixture, then swirl gently with spoon. Sprinkle remaining Parmesan over top.
  • yum!
I saw a recipe on Facebook for Hamburger Stew and we made it yesterday in the crockpot! 2 lbs lean ground beef, browned. 1 small chopped onion and 2 stalks celery sliced thin and sauted with onion. 6 carrots, sliced. 2 large potatoes, large cubes (like stew). 1/2 cup uncooked rice. 2 cans stewed tomatoes. 2 cups water. Salt and pepper. Layer in crock pot: carrots, potatoes, rice, hamburger onion and celery mixed. Water, tomatoes. Cook in crock pot on high 4 hours or low 6 hours. Stir before serving.
