Peachy Keen

Looking ahead, peach season will be here in the farmers' markets. We want to go beyond peach cobbler and have a few recipes that are simple, stove top prep or no-cooking-required.
Ideas?

    Hopefully you can produce more of that bug resistant peach tree. May have to check out SC too. We've always bought in GA though. Family tradition and all that. Keep planting them! We support local growers:W

    Smoothies are a great idea too. We're going to swing through south GA and pick up some early peaches to use on the bacon centric menu. I hope we will have time enough to can them! If not, a juicy peach in a smoothie is just the ticket too. :W

    Great ideas: I think we'll stick to non-alcoholic beverages because of the young children in attendance but that salsa has me thinking. :R

    That sounds like a great addition to the bacon-centric menu. Just remember that if you are not canning the peaches you can cut back a lot (up to 2-1/2 cups!) on the sugar.
    I wish it was peach season on my end already but won't happen until about July. So I'm just concentrating on asparagus for make ahead dishes for the minute.

  • Sliced peaches covered with a scoop (or two or three) of good vanilla ice cream. No cooking, no fuss, can I have a second helping, please?
  • Carmelised Peaches serves 4 adapted from Jacques Pepin

    halved peaches, about 1-1/2 to 2 lbs, pit removed
    1/2 cup of heavy cream
    1 TB cognac, brandy or rum (optional)
    1 TB lemon juice
    1/3 cup sugar
    4 slices brioche or pound cake, 1/2" thick, toasted
    2 TBs coarsely crushed pistachios or walnuts (optional)
    .........

    Place sugar in a large bowl; add peaches, and toss to coat well. Heat a large skillet over medium-high heat. Add peaches, cut sides down, cook, turning peaches after 5 minutes, until sugar caramelizes and peaches are tender, 7 to 8 minutes.

    Add alcohol and lemon juice; cook until reduced, about 1 minute. Add cream and cook until thick, about 1 minute. If caramel is too thick add up to 2 TBs water to thin to desired consistency. Plate cake/bread and sprinkle peaches with optional pistachios.

    I like to add a cardamom pod over ground cardamom but either will work.

    Spiced Peaches


    Pureed peaches (or most any stone fruit or berries) can be used to top ice cream, shortcakes, in a parfait with crumbled cookies, as a filling for crepes or as a change from maple syrup on pancakes.


    This recipe says it's for Bellinis (another good use w/ or w/o alcohol) but by using a medium strainer instead of fine it's great for food:

  • STRAWBERRY BANANA CHEESECAKE SALAD Stir together: 1 bag of miniature marshmallows 16 oz of vanilla yogurt 1 regular size tub of cool whip 1 (3 1/2 ounce) box/pkg of no bake cheese cake filling (just add in and mix with rest of ingredients…do not actually make the mix) Stir in 1-2 containers of sliced up strawberries 3-4 sliced up bananas Other fruits can be substituted or added as desired. Best served chilled and same day due to banana discoloration

    Just add Peaches instead.

    Seems like peach purée, some O J and peach schnapps or vodka would make a nice boozy slush served with ginger ale. Drop in a handful of whole blueberries to make it pretty.
