Question re crockpot breakfast

They are having a brunch after church svc next week.

I was thinking of making a crockpot casserole - hash browns, eggs, cheese, ham, etc.

The recipe says cook on low 4 hours and not to overcook.

I've never done anything like this in the crockpot before.
Any suggestions on how to get it accomplished without having it overcook into a mushy mess?

We normally get up at 6:30, leave for church 8:15 - and once we get there, it will be a bit over an hour until it is time to eat. Is there a way to time this out so it's presentable?

Or does someone have any better suggestions?

  • This might work better
    This recipe takes 8 to 10 hours. If you let it cook 8 hours at home and then take it to church the 10 hours would be just about up when you ate.

    We have also served sausage gravy and biscuits at events which is really easy, OPEN CAN AND HEAT and buy BISCUITS.

    Or those little cupcake size quiches are great for a crowd, You could probably assemble them the night before and then cook in the am.

    Slow Cooker Breakfast Casserole

    Ingredients

    1 bag Frozen Hash Brown Potatoes (32 oz)
    1 lb Bacon - can substitute ham
    1 Small Onion diced
    8 oz Shredded Sharp Cheddar Cheese
    1/2 Red Bell Pepper diced
    1/2 Green Bell Pepper diced
    12 Eggs
    1 cup Milk

    Instructions

    Cut bacon into small pieces, cook and drain (You could use precooked bacon to speed up the process).
    In the bottom of a slow cooker, layer: half of the hash browns and half of the following: onions, bacon, green and red peppers and cheese. Repeat layers with the remaining ingredients ending with cheese.
    In a medium sized bowl beat eggs and milk together. Pour egg mixture over the casserole and top with salt and pepper to taste.
    Cook on Low for 4 hours or warm for 8 hours.
  • That is a great idea. Can you share a link to this receipe? I would set a timer on the power cord and wake up to the aroma and breakfast.
  • The only thing that comes to mind is to cook everything but the eggs. Mix something like egg beaters in and cook on the stove top, put in a casserole and add a cheese topping to melt in the oven while you are getting ready.
    I wouldn't think you hands on time would be more than 5 or 10 minutes.
