Option 1-I would use fewer coals and line the DO very throughly to minimize sticking. :C
Option 2-You can also use the nesting technique: trivet in the bottom of the DO; baking pan or dish on the trivet. Make sure the lid can seat correctly on the DO and then use the normal number of coals for your target temp.
