What's your favorite recipe using turkey leftovers?

Well, the turkey's gone. Lots of the usual microwaved plates of leftovers and white bread-with-mayo sandwiches. Then I made a few quarts of broth from the bones and bits, and we had turkey rice soup for a couple of nights.

The last of the turkey meat and broth went into pot pies using last Sunday's Parade Magazine recipe I mentioned earlier and they were great. Good use of the four 8-oz ramekins in the dish cupboard. The only downside was having to shell out a few bucks for puff pastry, but it was worth it.

Parade Magazine Turkey Pie Recipe

Mine is simple. Turkey Sandwich.
2 Slices of good quality white sandwich bread. Potato Bread or ?
Several slices of roasted turkey. I like the dark meat.
1 Heavy slathering of Mayonnaise. Best Foods/Helmans
1 Green Onion, chopped
Salt and Pepper
YUM OH!

Tonight it's smoked turkey and sausage gumbo.

Break up and layer stuffing in bottom of 9x13 pan, sauté 1/2 cup celery, 1/2 cup onion, add 1/2 cup mayo, mix with enough of the left over turkey, to cover stuffing. Cover that with more left over stuffing. Beat together 2 eggs and 1 cup of milk and pour that over the whole thing. Put in fridge over night. (I often freeze at this point) When ready to use, set out about 20 min. or thaw in fridge, if frozen. Spread a jar of gravy over top, (I use homemade) sprinkle with a little paprika for looks, bake at 350 until hot in the center, about 35-40 min.

I often put 1/2 this in a couple 8x8 foil pans, and freeze. Great when camping come summer.

I'm putting the lack of leftovers out of my mind by moving on to my Christmas menu. I get to cook for this one!!!!

Yes, we, too spent the weekend at a daughter's house and smoked a turkey. Had to leave all the leftovers and broth. I think I'll do two birds while the family is all here for Christmas.

Yep, I ended up cooking a turkey after Thanksgiving just to have the meat! Went to my daughters home for turkey day so no leftovers to bring home, I think I like them more than the first go-round!

Congrats to all you guys/gals with leftovers. We ate at our daughter's and I've been craving a turkey sandwich!!!

Started our turkey soup last night by putting the carcass and various spices in the crockpot and slow cooked overnight (about 10 hours).

Strained broth this morning took the meat off (set aside) the bones discarded the bones and added celery, carrots, onion, garlic, tyme, salt & pepper and cooking for another 4 hours.

Then the meat and noodles go in for another half hour.

Place smells great and can't wait for when it's all done.
