The nice thing about eggs we've found is the fact that they're pretty neutral in taste and can be dressed up or down depending on your time and what you're in the mood for. So many good recipes here already. Let me suggest you take these recipes and change the spices for different ethnic flavors if you want more variety. E.g. Any mayo can be flavored with:
- hot sauce and cumin for Latino flavors
- ginger, garlic, pure sesame oil and/or wasabi for Asian
- garam masala, curry powder and use Korma sauce instead of mayo for Indian
- mustard and/or olives and/or sweet relish or kosher relish for traditional American flavors
You can chop the eggs and mix them with flavored rice and sautéed vegetables.
I think you get the idea. We like to do up batches for a week's worth of meals at a time when we're going to hit the road. We store them in the RV fridge and it really cuts down on the food expenses because we don't have to eat out.
For two people: We'll do up a dozen boiled eggs; 2 cups of dry rice cooked according to the directions; and a fruit salad of grapes, melons and oranges for our OTR (on the road) meals. Once we camp, we'll do dutch oven cooking and more dishes from scratch.
Addendum: you can use our Chicken Korma recipe and sub hard boiled eggs for the chicken
