I like to put sliced hard boiled eggs on the top of a bowl of Ramen noodle soup, then top with finely minced green onions. I use a whole package of noodles and about 1/2 the broth and put in a pasta bowl.
As for how to chop eggs: I do it the way my grandmother taught me.
Hold egg in left hand. With a paring knife,slice horizontally into thirds and then vertically into thirds, the paring knife going down between your fingers. Then just slice across the egg while still in your hand. I've done it this way for 50 years and never cut myself. You get perfect diced eggs. If making egg salad, put into a bowl and smash with a fork to get the yolks creamy, then add mayo, mustard, salt and pepper and whatever else you like....I like chopped black or green pimento stuffed olives.
