Which type of coupler latch do you have on your trailer coupler?
Here are three of the many types out there

Notice that with a traditional WD Hitch system, the ball would be
up against the coupler dome and have a VERY high amount of contact
vs the Anderson with a VERY small contact patch via the latch
pawl
As for the top of the ball wearing...look at the image and notice
that is about where the coupler dome ends..to allow the ball to
exit the dome area
With an Anderson...the ball is PULLED back to contact the latch
pawl and rear portion of the dome
Why Anderson lists "do not use' for some of the latches out there
I do NOT know which ones they list
Suggest you check the condition of your coupler latch...as that is
where all or most of the trailer forces are by design.
For the coupler dome is what keeps the ball in place with the latch
narrowing the balls exit out of the dome
The flat on top of the ball is to allow the ball to 'back out' of
the dome and then drop down and out
The Anderson by design has the ball OUT of contact with the
coupler dome
