We've used the toggle or molly bolts (same thing) for many things that aren't real heavy. As others have said, gluing them first before tightening will help, because if you don't, they'll tend to spin and not tighten snugly against the wall.
When hanging things that are heavier, (such as a clothes rack) we use a finished board that is wide enough to span two studs and we anchor them to the studs. A stud finder will help you find stud locations, or just thump on the wall and you can tell the difference between the hollow sound and solid sound.
Once you have the hooks up and the shelves up, then you'll have a place to store and display all of those beautiful quilts and crafts whilst on the road! :) Your work is very impressive!
