I have a similar setup. While I have not towed this combo in mountains, I have towed other combos in mountains. I would not hesitate to do it with my current rig.
My Sierra has a 5.3 with 3:73 rear end. My towing mileage on flats is about 11. My day to day city mileage is 14/15. If I drive mixed city/hwy I get 18 without trying hard. We leave the DIC on "Avg. Mileage" to monitor and both my wife and I are pretty light on the pedal.
I have 4x4. I like it because of WI winters. But it's not needed for hwy towing. In fact it will reduce your towing capacity some, usually 300-500# depending on overall configuration. I'm sure the steel skid plates and transfer case on mine weigh at least 300#.
