I was am in the same situation as you (tow only for holidays in the summer), and I chose the Hemi and haven't regretted it one minute.
You won't notice the stability difference pulling a fifth wheel. You will notice it pulling a TT. There are greater demands pulling TT. I switched from a diesel to the coil spring 2500. A Very big difference. My 2500 will pull a 29'.7" tt almost as well as fifth wheel. It is so good that I would never consider buying a fifth wheel to improve towing. There are just no problems, sway, push or any other disturbance.
