I would set at 11.5, maybe as low as 11.0
Certainly something lower than 12.0
As stated running voltage under load, is less than actual low voltage at rest aka state of charge
Batteries are a consumable product, if you dry camp they, will need replacing at some point in time, it's use and replace !
But good care and management can help mitigate the costs

I think I set mine at 11 IIRC.

The main thing is to be able to run inverter loads early in the morning during quiet hours while the batteries are down to 50%. So that 11v setting is good with four 6s as the bank.

Later that morning you can recharge the batts during "generator hours" but you will want to make toast, etc long before that with the inverter.

It will be alarming LOTS at 11.9 volts. Some larger inverters do 10.5 for alarm and 10 for shut down. You have six volt jars--they exhibit more voltage drop under load.

The chart above is a rough guess at 'resting' voltage. For that you would want an alarm at 12.2 volts.
