Kool o matic fan and thermostat

There is Kool o matic fan above the stove and a thermostat in the hall of our 2001 holiday rambler. Does anyone know where I might find a manual for this?

I'm trying to figure out what it really does, is it an air conditioner, a heater, a vent fan?

There are two positions on the fan control. One is on and one is automatic. You can turn the fan on, or you can set the control switch to auto and set the thermostat to the desired temperature inside the coach and when that temperature is reached the fan will turn on. It will then exhaust the warm air until a lower temperature is reached and will then turn off. Works just like a whole house fan or attic fan on a house.

Can someone explain the thermostat? What is its use if it is a fan?

It's an exhaust fan similar to the one in the coach bathroom (Fantastic Fan), but it moves much more air.
