Help with GVWR, GAWR and Cargo Weight

I'm all confused. First, My GVWR is 200 pounds greater than my GAWR (4,400 X 2 = 8,800). I've seen this the other way around but why would my Gross Vehicle Weight Rating be higher than what my axles can handle safely?
This got me to thinking more about my cargo weight, my tow vehicle and just how safe am I traveling down the road. In the image are the three stickers on my camper followed by the sticker on my tow vehicle (Chevy 2500HD). My wife and I took everything out of our trailer and weighed it and I mean everything. From bedding to dishes to pens and pencils to the package of napkins. Man does that stuff add up. We have 500 pounds of "stuff", not including 150 pounds of "stuff" we don't take on every trip and then there's the fresh water issue. Sometimes we travel with it, sometimes we don't. That would be another 390 pounds according to the sticker on my trailer. Then there's tongue weight. It's generally 1,200 pounds give or take 50 pounds depending on what we're bringing with us. And then there's firewood and camp chairs and coolers and suitcase solar panels and a big telescope that goes in the truck or in the bed of the truck. Add another 500 pounds there! Yikes!!! Before we put everything back into the camper, we want to make sure we aren't over the weight limits. Can any of you help me out with all this please?
