Favorite Breakfast

Oh my lord, even on a gardening/run the rottotiller day, I haven't had a monster sized brekky like these for years and years.

Travel and hit the road meal - one I lived on during the Oz trip.

An orange
An oatcake (0 salt)
One pint/500 ml bottle of milk

= 3 food groups.

This recipe for bread pudding is BAD for your waistline and possibly your BAC especially when paired with a Bloody Mary, but it sure is GOOD!

Bread Pudding

5 cups bread cubes
2C milk
2 eggs
1C sugar
1 Tbsp. vanilla
½ C raisins (soaked in brandy)
1/8 tsp. ground cloves
¼ tsp. cinnamon
¼ tsp. nutmeg
2 Tbsp. butter, melted

Brandy sauce:
1C sugar
¼ C half & half
1/3 C brandy
½ C butter (1 stick)
½ tsp. vanilla

Preheat oven to 350°F. In a large mixing bowl, press the bread into the milk until all of the milk is absorbed. In a separate bowl, whisk the eggs, then whisk in the sugar, vanilla, allspice and cinnamon. Pour over the bread and milk mixture. Add the raisins and gently stir to combine. Sprinkle with pecans.

Coat an 8x8 pan with the melted butter. Pour the bread milk and egg mixture into the baking pan. Bake at 350°F for 35-45 minutes, until the liquid has set. The pudding is done when the edges start getting a bit brown and pull away from the edge of the pan.

For the brandy sauce: Place all ingredients in sauce pan, heat gently and stir often. Don’t overcook – only about 5 minutes.

It all sounds so good. In spring when we can get fresh peaches or nectarines, I make peach pancakes with honey butter. Usually I assemble all the dry stuff at home and seal in a freezer bag. 1 3/4 cup of flour, 2 T sugar, 2 t baking powder, 1/2 t soda and cinnamon, and a scant 1/4 t salt. On the day we want the pancakes, in a bowl slightly beat an egg, with 1 1/2 cups of sour milk, (buttermilk works also) and 3 T of oil. I mix wet with dry,leaving lumpy and then chop up a large peach or two, add to the pancake mix. I serve it with honey butter or syrup.

Our tradition, every Saturday morning, I get up and make Pillsbury cinnamon rolls, the kind that come in the can. They bake while I make coffee, fills the RV with the aroma that gets the kids out of bed. No matter where we are, Saturday morning is always cinnamon rolls. Not really sure how it started but it has been going on for three years now.

Got to ask one of my BILs to make his bread pudding (minus dried fruit since a munchkin I know is on a raisin strike. Sigh)so I can take it camping. He'll nevah give me the recipe for that OR his ducana OR his conch fritters but he'd prolly be tickled pink to know his nieces and nephew "asked" for it:W

Biscuits and gravy with sausage or good ole Army style SOS (hamburger version) over toast good cup of joe or maybe a Bloody Mary depending on the previous night's antics.:W

Gravy is just a matter of frying some real good breakfast sausage adding a little butter or margarine to the sausage, then sprinkle with maybe a 1/4 cup of flour and stirring til it's all incorporated with the butter and sausage, then add milk and stir til it's gravy. Serve that over the biscuits and don't forget the Tabasco!

Might want to try the frozen biscuits in the blue bag (Pillsbury) sometime. Really good, I think.
