salad dressing of your choice - michigansandzilExplorerWe are typically too busy to do anything that takes a lot of effort. And with wrangling 3 kids and 2 dogs, I don't want to exert any effort at lunchtime.
We do sandwiches, but that gets old. We also have taco salad and often eat leftovers or just yogurt/fruit/granola bars. - wbwoodExplorerWe tend to keep it simple. If no sandwiches, then maybe some beanie weenies, Vienna sausages, potted meat, and saltine crackers.

Leftovers
If some folks are adverse to leftovers, use the same ingredients as the previous night dinner but in a different way. For example, if I make pizza for dinner, the onions, peppers and mushrooms can be used the next day for Philly cheesesteak sandwiches. - Roy_LynneExplorerLeftovers. When the calendar is marked that we are heading out, I start to double up on our dinners and freezing half for the trip. There is usually enough for one dinner and lunch the next day, although I some times have to be really creative about stretching it out. Sometimes our dinners are the leftovers and occasionally even breakfast might be.

I buy one of those rotisserie chickens from Wynn Dixie. Pull all the chicken off of it and shred it. Put into a container.
Then I'll take some of the chicken and put it into individual containers with chicken broth, a couple with mayo and green beans, some with red sauce and rice, etc etc.
Pull one container out pop in micro and a warm lunch is served in 2 minutes. - SoCal_travelerExplorerCook more than enough bacon in the morning for leftovers, if that's even possible. Use the leftover bacon to make a BLT with avocado on toasted potato bread.

Have done that with deli roast beef adding brown gravy instead of cheese. Open faced, and we are rolling. Takes ten minutes.

Must have protein at every meal! - TvovExplorer IIBesides having the standard sandwich fixings available, many times we just have left overs from dinner the night before or even that mornings breakfast (usually involving sausage). We rarely spend much time or effort on lunch, too much going on usually.
- MerrykaliaExplorer III use the above recipe or something that is pretty close, but instead of the full-fat dairy, I use the fat-free half and half.
When we have a rotisserie chicken, I will freeze the leftovers in double wrapped freezer bags for use in this soup and others.
