The purpose of the metal racks is to let the hot air circulate all around, above and under the item you are baking. Things will also brown on top if baked uncovered just like they do in a regular oven. Jbrowland - if you have the racks - just try something simple. Follow instructions in your manual for the settings and bake some break & bake cookies or something. Once you get started you will like it. It took me a week or so before I didn't need the manual anymore. I do not use the combination cooking. I either use the convection setting or the microwave. Also do not use the computer preset times based on size ( compu roast, compu bake etc.) I set the time I want myself.
We have a trip coming up in a few weeks. Maybe I'll get adventurous and try baking some simple cookies. I have a Sharp unit. 2008. I never had luck finding a helpful manual for it. The closest I got was a short, 4 page manual that didn't even mention cook settings other than to point the button locations out.
