New Breakfast Ideas Needed for 2018 RV'ing season!

~ Spring RV'ing is right around the corner! ~

We need some new breakfast ideas.

This is the first one I am going to try.


Only I am going to use finely chopped fried bacon instead of bread crumbs to cover it! :B


Scotch Eggs
Ingredients Serves: 6

400g (14 oz) sausage meat
6 hard boiled eggs
7 tablespoons fine dried breadcrumbs
1 egg, beaten

Method
Prep:15min › Cook:25min › Ready in:40min

Divide sausage into 6 equal portions.
On a lightly breadcrumb-sprinkled surface, pat out each portion to about .25cm (1/8 in) thickness.
Wrap portions completely around each of the hard boiled eggs, pressing edges together to seal.

Dip sausage-coated eggs in beaten egg, then roll in breadcrumbs. Place on baking tray and bake in preheated 190 C / Gas mark 5 oven until lightly browned, about 25 minutes.

Tip:

To prevent the eggs from rolling around on the baking tray, stick cocktail sticks through the eggs at an angle pointing downwards.

  • Sometimes we make extra baked potatoes to use for breakfast. Slicing them in half I'll put it flat side down in a skillet of melted butter (one potato per person). When the flat sides are golden I remove them from the pan and plate them with a sprinkle of Greek seasoning. Next fry up one egg per person using the butter in the skillet and a dash of olive oil. Place egg on top of the potato. If you have a fresh tomato put a slice on top of the egg. The whole dish takes about ten minutes.

    Simple is always best for us. Don't forget about leftover pizza. Leftover meatloaf. Or a leftover porkchop. Reheated meatloaf or porkchop a perk up with a heaping spoon of applesauce on top.
  • One of my favorite quick breakfast is what I call a "Burrito Over Easy". I warm up (micro wave) a frozen burrito and lay 2 over-easy fried eggs on the top. I prefer the beef/cheese kind with little hot sauce on the burrito before I put the eggs on it. Quick and simple. Yummmm.
  • Quesadillas.

    Breakfast boats - old el paso makes tortilla boats. Heat them up and fill them with scrambled eggs, hash browns, bacon, sausage, etc. - whatever your heart desires.

    Breakfast pizza - top with eggs, bacon, sausage, etc.

    Grilled cheese sandwiches - add tomato, bacon, mushrooms, etc., as desired.

    Use a waffle iron and homemade whipped cream and make waffles over the fire. For best results always color your waffles green and your whipped cream red (red waffles and green whipped cream don't taste as good, trust me).
  • Stop at a bakery somewhere, and get a cinnamon roll for everyone. Dip in beaten eggs, and cook like french toast.
  • Zip Lock Omelet.

    Couple of eggs, whatever kind of cooked meat you want, some fresh veggies (don't use fresh mushrooms!) and some cheese. All go into a gallon size ziplock bag (use a good quality!). Moosh them all together in the bag, then squeeze all the air out that you can. Into rolling boiling water for 13 minutes, then fish out with tongs.

    Now before anyone even starts - Ziploc says their bags are BPA free and have no dioxin in the manufacturing process. Would I eat one of these every morning? No. But for a camping breakfast once in a while, I'm good with it.

  • STUFFED FRENCH TOAST

    Take a sausage patty and flatten with a rolling pin until approximately 4" width. Quickly brown on both sides, set aside. Place 2 slices bread down and put a thin slice of cheese on each bread. Add sausage to one side and cover with other cheese/bread slice, cheese side in. Dip bread into egg wash and fry like you would regular french toast. The cheese will melt and hold the two slices together. Serve with confectioners sugar and/or syrup.

    I have also used bacon for this, but ham should also work.
  • Chicken fried steak. We buy them by the box and repackage them to suit oir needs. Same for hash browns. All cook perfectly in a cast iron frying pan.
