- Leo_BensonExplorerfrittata is a great way to use eggs and any veggies on hand. To make it lighter, use half the yolks. Makes great leftovers to take to work, too. I like asparagus, potatoes, mushrooms, and a dusting of good cheese, hand grated.
- Leo_BensonExplorerfor fast egg salad, put your mayo or whatever you're binding with in the food processor. If using celery or onion or whatever, put in and pulse a few times. Add any seasoning then halved eggs and pulse VERY briefly a few more times and you're done.
I like a lite version so I use one Laughing Cow Light, a tbsp of fat free sour cream, a tbsp of lite mayo, some dry ranch dressing, pepper, green onions and celery, and pulse. I add the eggs, with half of the yolks removed, and pulse 2 or 3 times. I really like that on pita bread cut in quarters and toasted crispy. In fact, it's what im having for lunch right this minute.
If you don't want to go the FP route, use a potato masher in a flat bowl or a pastry blender in a round bowl to chop up the eggs and mix in your ingredients. - Jim_ShoeExplorerI make the old standards. Tuna Salad and Chicken Salad. But mostly, I just peel and eat.

I used to add chopped cooked shrimp to a very simple egg salad (whites chopped, yolks mashed with plenty of mayo, a teaspoon of mustard, a little chopped onion, salt & pepper, all stirred together.) Pretty basic, but people always loved it, I think because the shrimp and eggy flavors weren't overwhelmed by other tastes. - Little_KopitExplorerAdd a diced hardcooked egg to any salad and you have a winner.
