Pancakes and bacon

We got to the campsite late last night, so our cuisine was a bottle of wine, a can of sprite, a bag of ice, and a bag of popcorn. Well, at least we were camping. Going back up tomorrow so I'll do a bit better planning ahead with the shopping this time.

Just spent 6 days at Sand lake campground and between meat, jerky spread, various summer sausages, brats and beer, my wallet was drained!

It's really tasty. Since it's mostly pre-prepped, it's great for that day that we get back late from hiking or kayaking and don't want to deal with the campfire. We actually use more lettuce and less chips so it comes out kinda like a taco salad.

Breakfast - french toast or pancakes, garlic onion potatoes, bacon, sausage and eggs. Usually there is 4 teenage bottomless pits to feed besides myself and the wife and sometimes I'm lucky if I get any food!

I'll cook 2 big meals for the day, otherwise its snacks and sandwiches during the day and items that can be cooked on a stick over a fire late at night.

Smoked Sausage, Potatoes & Green Bean Packets (We make this almost every time we camp)

Grilled Pasta Packets (We use ricotta instead of goat cheese)

Chicken Enchilada Nacho Bowls (Make the chicken mixture at home. It's got a kick, so if you don't like spicy, omit the chipotle.)

We almost always cook outdoors. Simple marinades can be made up ahead of time for chicken breasts and steaks, or better yet, a meat rub that doesn't need refrigeration. Veggie and/or potato foil packets make great sides. Quesadillas are also a favorite -- SUPER easy to wrap in foil and grill over the fire. And Hubby loves "Pizzadillas", which is a quesadilla filled with pesto, pepperoni, mozzarella and other favorite pizza ingredients. You can use a foil pie tin to make some amazing campfire nachos.

For breakfast we'll often make these Breakfast Eggs in Foil Bowls which are versatile and can be customized for everyone's taste.

We camp in a Class B Camper Van so we understand the challenges of having a small fridge and two-burner stove.

We prepare a lot of meals at home and freeze them. Things like spaghetti sauce, sloppy joes, meatballs and gravy, soups, stews, etc. can be kept frozen then heated when you're ready to serve them.
