When you turn the gas off it may take awhile for the gas to get back to the fridge. I would first turn on a gas stove and light it, that lets you purge some of the air and lets you know the gas is working. Then go back and start the fridge. Does your fridge have a indicator light to tell you it is on gas? If it does and the light does not come on try it again for a few cycles to get the air out of the lines

Dometic, double side by side doors, ice maker. Haven't tried electric yet. Have no idea how to check if gas is lit.
That is what you are doing wrong.. You have no idea.
OK, step one.. You need to loacte the burner and access it without disturbing any of the gas or electrical connections. Now, with the fridge warm.
Have your partner start it on GAS, watch and listen
You should hear a CLICK as the gas solenoid opens and then a SNAP as the ignition tries to light it.. (This assumes it is not a pilot model and I'm fairly sure it is not) if you have even seen a pilot light the flame is not much bigger, but it will be clear
Do this around twilight as that makes it easier to see.
One hopes, that when they replaced the cooling unit they took care of all the maintenance on these parts .. but alas "Hopes" is the key word.
Once this is done, Report back to the forum.
REMEMBER, it can take 24 hours or more to chill out.
Option: Since you had a new cooling unit put in, go back to the installer and say "It not working, what wrong" or.
Kind of like Patric Stewart going in to the singer store with one of their products that was malfunctioning and saying "Make it Sew"
(If you do not get the joke, don't worry about it). - OhhWellExplorerLike about 3 others have said, it can take a few tries to get it to light after air has gotten in the propane lines. Even after purging up to the stove using the burners, it takes sometimes 5 or more tries cycling the fridge before I get a good burn. The hot water heater is all the way in the back of our coach and boy is that unreliable for quite some time when I let the gas lines depressurize.

Do you have any error codes flashing on display panel?
RV is level...correct?
Here is manual for a Dometic double door side by side.....LINK - zman-azExplorerWhen you turn the gas off it may take awhile for the gas to get back to the fridge. - rrupertExplorerDig out the manual and follow the troubleshooting guide. Also, feel for heat in and around the heating unit/chimney. You should get a warning light if it doesn't ignite. There should be a gas valve for the fridge, it could be turned off.

How long has it been running?
Does the gas flame come on?
Does it cool on electric?
IF cools on electric OK......
Then need to check that flue baffle is correctly positioned...too high/low results in improper heat transfer
Flue tube.......carbon build up will reduce heat transfer
Dirty burner/orifice...improper flame
What fridge do you have?
It lights automatically. Did you do the Cooling unit or did someone else? You need to run it on 120 volts for 24 hours and see if it works. IF it does NOT light, the "Check" light should be ON on the inside eyebrow panel. There will be no indication if it fails to work on 120 volts other than no cooling.- Dometic or Norcold refer or aftermarket? Dometic, you MUST transfer the burner flue baffle or the refer will not cool on LP. Norcold cooling units(OEM, not aftermarket) come with the baffle already installed. Regardless, if it does NOT cool on LP and the LP pressure is at least 11.5 inches, then the odds are the baffle is NOT installed. The baffle is only for LP operation. It is a swirl shape and distributes the LP flame in a circle to evenly heat the boilet flue. Doug
