Beer Bread

My 92 yr old mother has a recipe for beer bread but isn't sure if she should grease the pan. I'm pretty certain that any bread pan should be greased but decided to ask anyway just in case. Thanks....
  • Mr. Ed, I'd say yes to grease pan. But if you publish the recipe I'll try it both ways, It sounds GOOOOD.
  • Have been baking bread for over 60 years and have never seen a recipe that says to use an ungreased pan! I guess it would depend on how much grease/butter/oil your mother uses before letting the dough rise.

    Aside to Cuffs: I don't know the recipe but when I find out I'll post it here. Perhaps it can be found on the Internet.

  • Have you tried making it with a dark beer like Guiness? That is the beer DH has and I thought I would try it.

    Don't know how that'll work. I'm sure my mom uses "regular" beer. Wouldn't hurt to experiment, though. :)

    Beer Bread 3 Cups self rising flour 12 oz Beer (room temperature 4 tbsp sugar 1/4 cup melted butter or margarine Mix first 3 ingredients, pour in lightly greased loaf pan. Pour melted margarine or butter over top and bake at 350 for 50 minutes. You can add other ingredients like garlic or cheese.

    I remember when you posted this and I did make it several times just the way you wrote it. It was really great and so easy to make. Thanks once more for posting it.

    This is an excellent recipe.You can also modify it by using ginger ale or a lemon lime soda and cinnamon, raisins, nuts, etc.

    As far as greasing the pan, it depends. I bake in USA pans and a Lodge CI pan or for artisan a Lodge 2qt DO. I don't do anything to the USA, but I brush the CI with oil. I don't use teflon, but I would think a very light oiling would be advised.
  • No need to oil the pan. Just melt the butter in your baking pan, then pour off the butter to use to top the dough.
  • Yes, grease or oil the pan. I mix the melted margarine in the bread not on top because it tends to keep the bread fresher after it is baked, if you don't eat it all at once! ;) Our friends own a bar and every so often will buy a specialty beer that isn't a hit with the beer connoisseurs (Bud Lite person myself) he will sell it as the Mystery Beer of the day for a $1.00 a bottle. I buy a bottle "to go" and make beer bread. The best so far was some type of apple ale. Right now I have a bottle of 1554 Enlightened Black Ale to try as soon as the mood strikes me.
