As long as your pot fits on the top you should be fine. I'm kinda interested in this topic since I'll be deep frying for the first time in donkey years on the campground this year. Still making up my mind if I'll bring my charcoal Go Anywhere Weber grill (small rectangle w/ a non adjustable grate) or 18'/22" "seen in backyards across America" Weber kettle.

My "Ol Virginny" Nana called the 3" deep 12" CI implement she gave me a frying pan but in her defense she might just have changed the language around so her Caribbean-Yankee family knew of what she spoke;). What were you frying? Boneless chicken or may be wings? Actually you CAN pan or shallow fry in a pot with less depth but I dinna think that was what the OP was talking of. Smart you to expand the meaning and think past the obvious:). - fla-gypsyExplorer

Chicken was great... We use a lid on the cast iron skillet just like at home... If you use a regular type fancy big store metal skillet the propane flames will probably do a number on it...
