One Pot Meals (?)

I'm a retired single traveler and not a fan of cooking (I can some, but...). I like the parks rather than private campgrounds and sometimes get where I can't purchase a meal. I didn't get results searching for "one pot meals". Do you have any good ones?
My goal is one pot on the stove or, preferable, microwave. Cooking in something disposable would be even greater!
  • For breakfast we have found the bags of breakfast sausage patties (fully cooked) and real egg scrambled egg patties from Walmart. Toast an english muffin, microwave the sausage and egg patty as directed. Put on muffin and top with a slice of cheese -- you just made a Sausage McMuffin. We use this as a travel breakfast. Something that will stay with you awhile and not leave you hungry an hour down the road - fast - no clean up required as you can use paper plate and paper towels for the cooking which will absorb any of the grease from the sausage .
  • This us a great thread...mostly what we get in restaurants isn't as fresh as we like. I like the crockpot ideas. Grill pork chops, chicke, or burgers. Add simple salads, canned soup, steamed fresh vegies, sides like pot salad, cole slaw etc. As tasty and fraction of the cost of eating out. When I'm alone. I don't enjoy sitting in a restaurant anyway. Keep healthy snacks around like nuts, wheat crackers (no fat), fresh fruit.Minimize sweets. Treat yourself 2x week.
  • What you need to do is search for "skillet meals." These often have a modest amount of meat, extended with vegetables, rice, or pasta. One of these plus a nice salad is a great meal. Many of the recipes will make way too much for one person, so cut it in half. Or make the whole thing and freeze half of it for a few weeks later.

    You can often use ground beef, ground turkey, or canned chunk chicken.

    Make a couple of these meals and you can eat well for a week. Don't sabotage yourself living on junk food.
  • I can appreciate a single traveler not wanting to gather all the ingredients for meals, etc.

    Our sons go to REI or some other camping store and buy the dehydrated meals when they are tent camping. Lots of variety from what I can see and they say they are not bad. Might be handy to have some on hand. Not much skill needed to boil water!

  • We also do the going down the road crockpot meals. Prepare in the morning before take off, put the crockpot in the kitchen sink. Halfway there we add brocoli in a basket right on top of the meat dish which has carrots, potatoes, etc. Works great.

    Also the Cathy Mitchell crockpot meals that use pastas, or cinnamon rolls also work well. You can find her on YouTube.
  • One pot meals do need some planning, as the ingrediants need to be compatible with each other in regards to the cooking method.

    Obviously, there's single ingredient meals too, like hamburgers, or a big batch of taco meat or fajita chicken. Make up several pounds, portion and freeze, then its just a reheat. Taco and fajita take a lot of condiments though, not always easy in an rv.

    I like no-pot meals, like sausage, steak or chicken on the grill and a potato in the microwave... ok so I do cook a few things with the nuker :)

    Cheaper cuts of steak can be bought a few lbs at a time, tenderized and marinaded, and then portioned and frozen.

    Sometimes I wish I had an oven, mostly during winter camping... roasting in the crock just isn't the same, and I haven't tried cooking any sort of bread in the crock.

    1. Take any can of soup. Add some vegetables (fresh, frozen, or canned). Add an egg if you want more protein. Eat with bread, crackers, chips, microwave baked potato, etc.

    2. Ramen noodles with egg or ham and vegies.
  • I was searching this forum for camper-friendly solutions. Not planning enough to use a crock pot.

    What search engine did you use? I got over a million results for one pot microwave meals



    I'm not a fan of the microwave personally, I don't have any experience to share with you there. Mine gets used for reheating and popcorn.

    One pot meals I like on the stove top are:
    Chili
    Bear Creek Soup (very hearty mixes)
    Pasta - one pot, used twice (is that cheating?)

    In the crock pot:
    Roast (whatever is cheap) plus a bag of frozen stew veggies
    Corned beef, cabbage and potato
    Chili (again)
    Ribs
    Soup (again)

    I like the crock pot because I can run it on my inverter and it'll cook while I drive. It sits on the floor wedged in so it won't slide around, rubber bands holding the lid on. I can do my ten hours of driving, and have dinner cooked at the end of the day.
