Gas line

If a person wants to install, say a BBQ quick connect fitting 10' or 20' away from where a capped tee is, is there any reason why you can't just use the appropriate LP rubber hose?

I agree with the copper but I think you'd want to protect it with some plastic wiring loom?

Sorry, nope. Short run from tanks, use LP rubber hose. Long runs, use copper or black iron. Short run to appliance, use copper. The stuff you are talking about is meant for a one time install in a house, bent once and not moved again. Too much movement in an RV. Why take risks with stuff that explodes? Just not worth it.

Mine is all rubber hose also. The fittings appear to be aluminum.

Copper lines have been used for years in the RV industry. Make sure you use Soft Drawn copper, not hard drawn. Hard drawn copper will work harden much faster with vibration and will crack. If you install soft drawn copper properly it will outlast the RV by many times.

lp use, would that invalidate the RV insurance policy, should there be a claim.

Black pipe and copper are the only two things acceptable for any application where is movement or vibration. Even the flexible hose behind your Sticks & Bricks gas stove is only good for one use. Where I live, it is against state law for an appliance dealer to replace a gas stove and not replace the flex hose also.
Copper is not the cheapest material to run gas lines, but the RV builders use it so that should be an indicator. They use nothing but black pipe and copper tubing.
Many owners come on here to ask for advice and when they don't get the answer they like, do it their way anyway, and that applies to propane, electrical, and anything else that can cause injury if not done properly, wire that happens to be on hand, air compressor quick connects for gas, etc. I hope it works well for all of them.

You are probably talking about CSST stainless steel gas pipe. I would not use it on my travel trailer because it is too easily punctured and it splits easily. I would only use copper or black steel.
