Never mind the price, most of the processed garbage isn't good for you anyway. Home made roast pork, beef, chicken and turkey all have a place in my sandwiches. Home made canned smoked salmon or trout are right up there too. - Opie431ExplorerSeveral months ago I ran some baked turkey thru the food processor and froze in a a peanut butter jar. I took it out this morning, defrosted it and added mayo, chopped celery and a little relish to it. It tasted fine. I usually do not like frozen cooked turkey but this tasted as tho it had just been made. With just two people at home leftover turkey lasts forever and I was happy to learn that making it into sandwich spread for use in a few months works.

- Super_DaveExplorerBK, I like using eye of round for making my pastrami. A few days in some instacure brine and then into the smoker. Then pastrami burgers and Rueben sandwiches.

I coated it in dried Oregano, Basil and Garlic powder. The meat was infused with flavor.
It came out perfectly medium rare, juicy and so tender.
I have a Kitchen Basic meat slicer that works very well.
Sliced it thin for Sandwiches this week. $4.50 a pound.

I grind some ham and a hot dog or two together, add mayo, celery and perhaps
some chives.
I shape hamburger patties and stick them them in the freezer so my husband can have one when he wants one, which is often.
Once in a while I want a salmon sandwich. Now with only two of us at home, a small can is large enough.
I had a friend who liked cold, mashed potato sandwiches. Not that hot mashed potato sandwiches sounds any better. - gboppExplorer

I also agree. But, we use ground turkey for our meatloaf. - NYCgrrlExplorerMost any leftover roasted or grilled meat or veggies can be used to make sandwiches. Wuvvv the chicken curry salad recipe above. You can also use chicken to make a stuffed pita sandwich with chicken meat, salsa, either from the jar or produce section, avocado, and salad greens.
Chop up some olives or buy chopped olive salad in the jar, open a can/pouch of tuna that you've doused w/ your favorite olive oil, onion slices, an anchovy filet or two if you like it, tomato slices, a lil basil pesto or fresh leaves all combined atop ciabatta bread roll or Italian bread. Put a weight on the sandwich if you've the time (CI pot; cans) if you've the time and eat. Also works nicely with chicken replacing the tuna.
2 or 3 thick slices of a nice sopressetta or your favorite hard salami, mixed with salad, olives, and cheese on a sturdy bread. Buying salami by the.........sausage is less expensive than the slice varieties and generally better tasting too. the harder the salmi the longer it lasts and tastes.
Grilled veggies with bread.
Thin boneless porkchops on sale at your end? Grill a batch, refrigerate, to use when needed and make a sandwich of it with your fav condiments.
