Collant Temp Sensor

I have a 2008 Fleetwood Discovery 39R. Been having trouble with the temperature gauge as it bounces from cold to hot and back and forth. The RV is currently in service with Freightliner. After 3 days they tell me they are still diagnosing the problem as they have replaced the temp sensor and the check engine still codes. Any help would be greatly appreciated. Happy Holloween!

so I assume your post is not quit as it reads and in fact the check engine lite comes on also when the gauge acts up and not to ignore the obvious its not actually low on fluid and really is getting hot?

Since temperature sensors are usually situated just upstream from the thermostat, my first guess would be a sticky thermostat. Did they replace it along with the sensor?
