Roast Stuffed Groundhog

At least once a month during the summer in central Pennsylvania, I kept the groundhogs out of a farmer's fields with the help of my old Mossberg 22 with peep sights.

One day, when my Uncle Charlie learned of this, he asked me to bring one back for him; so after the morning shoot, I took two or three back across the mountain to my Uncle Charle who pinched their thighs to determine tenderness and made his choice.

After field dressing the groundhog, he placed it in a bucket of salt water overnight. The next morning Aunt Gertie further cleaned it, seasoned it inside and out, and stuffed it with bread stuffing.

This was the basis of their Sunday dinner, and I was invited. I didn't accept and Uncle Charlie asked me if I liked chicken. After my affirmative reply, he asked me to consider what groundhogs ate and what chickens ate.

I still declined and mostly forgot about this episode until last weekend when my wife and I attended a horseshoe tournament in the next county. While on the sidelines, I overheard one man telling two friends about the Sunday dinner he and his wife were preparing for the next day. Yep, roast, stuffed groundhog. I almost invited myself to his house, but I didn't.

That said...does anyone out there have a tried and true recipe for roast groundhog?
