doing chicken quarters and ribs this weekend. what should I do with it?

usual sides are:
smoked baked beans
smoked mac and cheese
smoke potatoes
potatoe salad
cucumber and tomato salad
bruschetta


looking for something new. im keen on cool sides with some acidity to cut the grease.

Risotto Rice is a nice change
add some pineapple tidbits and walnuts to a regular tossed salad

I always do my baked beans in the smoker if I'm smoking pork or beef, and put them under the meat so all those delicious drippings find their way into the beans.

One of my aunts always brought this to potluck picnics - was one of my favorites
