We are planning to trade our TT for a 5er - my truck does not have the fifth wheel prep or whatever (not predrilled for hitch). Would you allow the camper store to install a 5th wheel hitch, or better off going to like a U-Haul or somewhere? Small mom and pop camper dealer or mega-store? I absolutely want it done correctly.

A custom rail kit from etrailer makes for a very easy installation, all you need are some good ratchet extensions and a big torque wrench to tighten everything to spec.
After seeing a dealer installed tube bumper accessory on an 86 CJ7 almost fall off while pulling a small utility trailer I dont trust anyone but myself. I cut the holes in my bed for the picture frame puck pockets and installed a Super glide on my truck. Obviously everyone isn't set up to do this type of work.
I dont think I would go to a U haul type place as I would consider them more of a trailer hitch place. I'd look for a dealer selling a lot of FW. It wouldn't hurt to look it over yourself when they are done. From there on keep an eye on it to see if anything loosens up or it starts making unusual noises or any glitches develop.
When I had to have one installed years ago on a former truck, the RV dealer did it. They sell a ton of campers and a ton of hitches. I was quite positive they knew what they were doing.
Your year Ram will have custom brackets available in the aftermarket that make it near impossible to screw up. If you don't feel comfortable doing it yourself or with friends I would say use a trusted body shop. Or a big company owned U-Haul center. Measure 4 times drill once.
