Instant Pot Yogurt

Milk (any kind - shake jug before opening)
1 small container good quality plain yogurt (must have “active cultures”)
Small glass jars. (not necessary to be canning jars)
Thermometer to check temp

Put 1 cup water in Instant Pot container. Set the wire rack in. Fill each jar with milk but leave 1” headroom. Set jars on rack, seal up Instant Pot and set on “Steam”, adjust time to just 1 Minute. Let pressure drop naturally, then remove jars to counter. Watch temperature w/thermometer and when it gets to 150 degrees, stir in yogurt (1 heaping teaspoon for each cup of milk). Check spoon and stir well. Return to rack, add glass cover (if you have one) or use instant pot lid (do not lock or seal up). Set controls for “yogurt”.
It will run 8 hours then display “yogt”. The liquid on top of yogurt is “whey” and can be poured off. (Use in pancake mix or soup-its protein). Cover jars & refrigerate overnight to set up. Add vanilla, cinnamon, jam, berries, granola, honey etc. or eat as is. I understand this yogurt can be used as starter for next batch but I’ve never done it.
